Citrus Roast Chicken (8 servings)

Ingredients:

1 whole chicken (around 3 1/2 lb), wash and dry
1 large Florida grapefruit
1/2 Tbsp garlic powder
1/2 tsp salt
1/2 tsp of pepper


Preparation:

Preheat oven to 350F.

Squeeze fresh Florida grapefruit over chicken. Place grapefruit halves inside chicken, then season with salt, pepper and garlic powder.

Cook chicken 15 minutes per pound until fully cooked.

Serve hot with some grapefruit salsa.
